recipe || lemon blueberry layered pie

If you are looking for a delicious, easy, summer time dessert, then this definitely a recipe worth trying! We have made it several times this year, and we haven't been disappointed yet! It turns out wonderful every time!

ingredients


  • 1 9-inch graham cracker crust

  • 1 8-ounce package cream cheese, softened

  • 1 14-ounce can sweetened condensed milk

  • ¼ cup powdered sugar

  • 1 3.4-ounce box instant lemon pudding mix

  • 2 teaspoons fresh lemon zest

  • ¼ cup lemon juice, freshly squeezed

  • 1 21-ounce can Blueberry Fruit Filling or Topping



 

instructions

Combine cream cheese, condensed milk and powdered sugar in a large bowl. Using an electric mixer, mix at medium speed for 1-2 minutes, until smooth. Add pudding mix, lemon zest and lemon juice; mix until well blended.

Spoon about half of the Blueberry Pie Filling evenly into bottom of graham cracker crust. Spoon lemon-filling mixture on top and spread evenly. Cover and chill for at least 1 hour.


Spoon remaining Blueberry Pie Filling on top just before serving.

recipe || homemade pizza

My family made this pizza not too long ago and it turned out so good!!! :D The hardest part in the recipe is making the pizza dough and chopping vegetables, but it really wasn't too difficult.

Pizza Dough


  • 1 tablespoon sugar

  • 1 1/4 ounce packet active dry yeast

  • 3 tablespoons olive oil

  • 3 3/4 cups all-purpose flour, plus more for dusting

  • 1 1/2 teaspoons salt



 

Directions

Whisk 1 1/3 cups warm water (hot from the tap) together with sugar and salt.
Sprinkle in the packet of yeast and set aside, allowing the yeast to get foamy.
Add the olive oil to the yeast/water mixture.
Begin to stir in the flour, stirring until the mixture forms a dough.
Sprinkle a working surface area with extra flour and begin to knead your dough ball for another 5-10 minutes, until the dough is smooth.
Brush a small amount of olive oil on the dough ball and place back into mixing bowl.
Cover and set aside at room temperature for about an hour, allowing the ball to double in size.
When ready, roll out the dough to about 1/4-inch thick (or to your preference).

 

Pizza Sauce


  • 1 to 2 tablespoons olivie oil

  • 3 cloves garlic, minced

  • 1 medium onion, chopped finely

  • 1/2 cup chicken broth

  • Three 15-ounce cans crushed tomatoes

  • Salt and pepper

  • Pinch salt

  • 1 teaspoon dried oregano

  • 8 to 10 fresh basil leaves, chopped



Directions:

Add a tablespoon or so of olive oil into a hot pan over medium heat.
Throw in the garlic and chopped onions and give them a stir.
Cook until the onions are soft, 4 to 5 minutes.
Add the chicken broth, whisking to deglaze the bottom of the pan.
Cook until the liquid reduces by half.
Add the crushed tomatoes and stir to combine.
Add salt and pepper to taste and a pinch of sugar.
Add the dried oregano and basil.
Reduce heat and heat low and simmer 30 minutes.

 

Toppings:

You can put whatever you like on your pizza.
This is what we used:


  • Italian sausage

  • pepperoni

  • mozzarella cheese

  • peppers and onions (sautéed for a few minutes for extra flavor)

  • fennel seed (we sprinkled this on the tomato sauce after spreading it on the pizza crust but before we added the rest of the toppings. The cheese goes on next, then the rest of the toppings)



 

DSC_5243The only thing we would do differently next time is spread the dough a little thinner because it was a lot of crust. We might also brush the crust with butter, and sprinkle it with garlic powder and parmesan cheese.

life post // shopping trip + april fools

life post __I haven't done a life post for quite a while. So I decided what better time than today!!! :)
(Sorry for the blurry photos. They were mostly taken on the phone)

If you read my last life post, then you might be wondering about our sweet cat, Thomas. Well, we had to put him down. He was such a sweet cat and I miss him a lot. We buried him under the shade of a tree where he liked to lay in the summertime.

The ladies in our church took a shopping trip about a week ago. It was a lot of fun!!!Untitled designI got some good deals on some things. For instance, I got a jean skirt for $2.50 at goodwill!
I got a shirt at goodwill and another shirt on the clearance rack at the Loft, some lotion and hand sanitizer at bath&bodyworks, and a necklace at hobbylobby!!! I'm real happy!

We ate at Chick-Fil-A for lunch!!! I got a grilled chicken sandwich, fries, and a lemonade!! Chik-Fil-A has the best lemonade!!!

Jason took Ben and I out on a bridge to get some pictures of the stars last week. The sky was clear, but right when we got on the bridge and got set up, clouds started rolling in. So I didn't get any pictures of the stars! :(
I did get a neat picture of a car passing us though, using shutter speed. I snapped the pictures in Raw, and since our computer is so old, it wont read them. So I couldn't upload them on here to show y'all.

April first was such a fun day!! I had been planning pranks for a few weeks!!!
I made "brownies" for my parents and grandparents!! They were a little disappointed when they found out they were literally "brown e's!!!"

I got Ben really good with that one! :)

The weather has been beautiful here!!! I've really enjoyed going outside!! Ben and I started our garden. We planted our tomatoes, beets, sunflowers, and carrots. We'll finish planting in a few weeks, when it gets a little warmer. I'm planning on canning the tomatoes and pickling the cucumbers! Hopefully it all works out!!
